1 can white corn (show peg corn)
1 can of black beans, rinsed and drained
1/2 cup chopped red pepper
1/4 cup cilantro
1 cup chunky salsa
1/4 cup oil
1/4 cup green onion, chopped
1 teaspoon minced garlic (or more)
1 Tablespoon lime juice


Mix all ingredients together and chill overnight. Serve with corn chips. For a little color and added taste, cut and mix pieces of avocado before serving.
