Strawberry Cupcakes
From the kitchen of Anne Dowell of Apron Strings featured in the summer 2011 issue of KANSAS!.
Ingredients
- 2 3/4 cups flour
- 1/2 cup cake flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 sticks of butter, softened
- 2 1/4 cups sugar
- 3 eggs, plus 1 egg white
- 1 cup whole milk
- 1 1/2 teaspoons vanilla
- 2 cups strawberries, 1/4 inch dice
Combine dry ingredients in a bowl and set aside. In mixer, cream butter and sugar for several minutes. Add eggs and egg white, one at a time incorporating each. Combine vanilla and milk, Add dry and liquid alternately. Add strawberries and mix until uniform. Only fill papers half full; these really rise. Bake at 350 degrees for 18 to 22 minutes. Makes at least 36 large cupcakes.
