1 cup of heavy cream
½ cup lime juice
½ cup of granulated sugar
4 eggs
1 ½ sticks of butter
1 ½ cups of granulated sugar
Powdered sugar
1 ¼ cups Old Muffin Factory Brand Buttermilk Pancake Mix
Preheat the oven to 325-degrees. Mix pancake mix, ½ cup of sugar and melted butter in a mixing bowl until well blended. Pat into the bottom of a greased 9 X 13 pan. Bake for 20 minutes. In a separate mixing bowl combine eggs, cream, lime juice and 1 ½ cups of sugar. Whisk until well blended. When crust is finished baking, let cool slightly to set. Gently pour filling over the crust. Bake for 40 minutes. Let cool, sprinkle with powdered sugar and enjoy.
