Pan Seared Filet topped with Peppercorn Cream Sauce4 6-ounce filets (tenderloin)
1 teaspoon seasoning salt
2 tablespoons olive oil
2 teaspoons minced shallots or minced red onion
2 teaspoons minced garlic
2 teaspoons green peppercorns (drained)
1 teaspoon cracked black pepper
1/2 cup bourbon whiskey
2 cups beef broth
1 1/2 cups heavy cream
Season filet. Preheat pan and add 1 teaspoon oil and gently place seasoned filet in pan. Cook 1-3 minutes on each side (depending on desired temperature), then remove from pan and set aside. Add remaining oil, then the shallots, garlic, green peppercorns and cracked pepper. Cook over medium heat until the garlic starts to brown. Caution: Add and flame the bourbon and deglaze the pan, making sure to scrape off the goodies stuck to the pan. Add beef broth and reduce to approximately 1 cup. Add cream and bring to a simmer while stirring occasionally until the sauce thickens slightly. Makes 4 servings.
Bacon & Bleu Cheese Whipped Potato
5 potatoes, peeled and chopped
1/4 cup butter
1/4 cup heavy cream
1/4 cup bleu cheese crumbles
1/4 cup bacon, chopped
1/2 teaspoon salt
Dash pepper
Boil or steam potatoes for 20-30 minutes until done. Drain and add butter, cream, salt and pepper and mix for 2-3 minutes. Add in bacon and bleu cheese crumbles and mix 1 more minute.
Sautéed Green Beans
1/2 pound fresh green beans
1 tablespoon butter
Dash garlic pepper
Melt butter over medium heat, add green beans and sauté 3-5 minutes. Sprinkle with garlic pepper and serve.
