Pumpkin Seed Nut Clusters

1/3 cup butter
1 cup fresh pumpkin seeds
1 cup broken walnuts
1 cup sliced almonds
3 egg whites
1 cup sugar
¾ cup whole wheat flour
¼ teaspoon salt

Place butter in shallow baking dish and microwave until melted. Stir in pumpkin seeds until well coated. Microwave on full power for 5 minutes, stirring once. Stir in walnuts and almonds and continue to microwave for 6 minutes until nuts are lightly toasted, stirring twice. Set aside to cool.
In large mixer bowl, beat egg whites until soft peaks form. Gradually add ½ cup sugar, beating until stiff peaks form. Stir together the remaining ½ cup sugar, the flour and salt. Fold into egg whites. Fold in seeds and nuts. Drop by teaspoons onto a greased baking sheet. Bake at 325 degrees F. for 10 to 12 minutes. Cool for 2 minutes. Remove wire rack to finish cooling.
Makes 48 cookies.
